PUMPKIN THYME BISCUITS AND GIRL IN RED

I made these pumpkin biscuits on a whim and now they’re all I want to eat. I was so excited about these, and girl in red’s new song that again captures the fall mood perfectly. And the title is too real - it feels like october flew right over my head. This is my favorite time of year and it really bums me out how fast it goes. I would imagine those two go hand in hand. girl in red’s music is such a perfect soundtrack to autumn; it’s melancholy, pensive, shy and catchy. She’s basically all I play the second the temp dips below 60. If only we could keep seasons on repeat like songs so we didn’t have to deal with the other ones we didn’t love.

These biscuits are easy — I promise — but packed with flavor. If you watch the video below, I show how to fold the dough to get those flakey layers too!


2 1/2 cups all purpose flour
1 1/2 tsp baking powder
Thyme, sage, cinnamon, kosher salt (measure however much you’d want)
mix into a big bowl

3/4 cup pumpkin purée, 1/3 cup buttermilk (I made my own using 1 cup milk and 1 tbsp lemon - save leftover to brush over the tops of the biscuits! 1tbsp maple syrup

set aside

1/2 cup VERY COLD butter - I usually freeze mine and then use a grater to grate it into smaller pieces. You can also use a pastry cutter, some people use a food processor — however you want to do it. Get tiny pieces and throw those into the dry mix and stir the pieces in to get coated in flour.
- add wet ingredients to dry and mix
- take the dough out and form into a square shaped piece of dough (maybe 9x3) From there, using your hands or a dough/bench scraper (HIGHLY recommend) fold the dough onto itself, one side at a time (like you’re folding paper) and press down to mix it in with the dough. Rotate dough 90 degrees and repeat process — do this whole thing about 3 times and then cut the biscuits into pieces. I got 6 biscuits from this dough. Freeze dough for 10 mins or so as you preheat your oven to 450.
- brush buttermilk on top of the dough & then place biscuits in the oven for 20 minutes.
